Abstract
Microbiological analysis has been carried out on 62 samples of ''toma' ' cheese from 58 mountain summer pastures, in Valle di Susa (Piedmont, Italy). The A.A. investigated for the following microorganisms: S. Au reus, Salmonella spp, Listeria monocytogenes, Yersinia enterocolitica, E. coli, total coliforms.
