The utility of anthocyanins and others variables correlated with them,
e.i. some phenolic compounds, color density and tonality, as discrimi
nant parameters to classify different red grape cultivars, was studied
using discriminant analysis. The results show the importance of acyl-
anthocyanins, specially p-coumaryl and acetyl derivatives, as paramete
rs to characterize red grape cultivards. Their discriminant role is in
depedent of the production zone and year in which the sampling is carr
ied out.
