Abstract
In flowers of Zinnia elegans containing acetylated cyanidin and pelarg onidin 3,5-diglucosides, an acyltransferase was found to catalyse the transfer of the acetyl moiety from acetyl-CoA to 3-glucosides of antho cyanidins, but not to 3,5-diglucosides. This enzyme was produced in qu antity even in acyanic cultivars.
