Intelligent computer programs capable of state estimation and predicti
on into the future would be helpful as 'software sensors' when dealing
with bioprocesses characterized by uncertainties and complexity. Fuzz
y logic has been shown to be a valuable tool in dealing with vague and
incomplete information, and in incorporating human expert knowledge i
nto process models. Neural network programs capable of learning from p
ast experience are useful when no exact mathematical information on th
e process under investigation is available. This paper discusses the s
tate of the art of such novel tools of artificial intelligence, with e
xamples demonstrating their potential in food-related applications.
