The 24-hour water stability of seven different binders for an abalone
weaning diet were tested. They included five alginates in combination
with two sequestrants, agar, gelatine and a mixture of agar/gelatine.
The best water stability was obtained with a 1:3 agar/gelatine mixture
which retained 70.7 +/- 2.7% of its dry weight after 24 h. A method o
f preparing this mixture is presented.
