A soybean lipoxygenase preparation was tested to directly oxidize trig
lycerides. It was demonstrated that the reaction may occur without lip
ase intervention. The activity of the enzyme was largely stabilized by
the direct use of a crude enzyme preparation. The nonpurified enzyme
was able to react efficiently on complex lipids in a medium containing
a low water concentration and in the absence of any surfactant or org
anic solvent; the activity of the enzyme was even increased when no so
lvent of the substrate was used.
