Four popular leafy vegetables of Assam, viz Ceylon spinach or asomiya
paleng Talinum triangulare (Jacq.) Willd.!, sea-holly or mandhania (E
ryngium foetidum L.), masudari (Houttuynia cordata Thunb.) and knot-we
ed or madhusoleng (Polygonum chinense L.), were analysed for their nut
ritional value. The vegetables were found rich in nutrient content. Mo
isture, carbohydrate, crude fibre, ether extract and ash contents (per
100 g fresh leaves) were: 79.70-90.71 g. 4.02-12.16 g, 1.92-3.27 g, 0
.95-2.76 g, 0.1 3-0.19 g and 0.70-1.92 g respectively. The contents of
mineral elements in 100 g fresh leaves were calcium 98.95-231.54 mg,
phosphorus 27.47-97.70 mg and iron 2.79-12.57 mg.
