The gascon swine breed has been in south west of France for several ce
nturies. It is a middle-sized black animal, with horizontal ears. Its
slow growth parameters and its adiposity led to an inadaptation to ind
ustrial productions that took place during the last decades. The breed
was becoming extinct at the beginning of the eighties, but a rescue p
lan was set up. Then a research and development program was built for
a better knowledge of its zootechnical and technological possibilities
in high quality dried delicatessen.
