Abstract
The flour dust is a source of chemical compounds in a bakery. It conta ins, for example, additional baking ingredients, pesticides residues a nd other environmental substances. The chemical substances in form of solid, gas and vapour that are produced during baking and the fermenta tion have however a very big influence.
