Methods for on-line monitoring of vicinal diketones and their precurso
rs during beer fermentation have been developed. Vicinal diketones can
be directly monitored using a gas membrane device connected to a GC-E
CD system. Liquid phase heat conversion of their precursors into diket
ones, after automatic liquid sampling, proved to be the most satisfact
ory technique for the monitoring of alpha-acetolactate and acetohydrox
ybutyrate. The methods were successfully tested on beer fermentation.
