A NMR method based on the analysis of the transverse magnetization dec
ay curve of water protons, was employed to study the hydration process
of Ife Brown cowpeas. In order to investigate the role of pH and Ioni
c Strength (IS) on the hydration process the beans were soaked in solu
tions at different IS and at different pH-constant IS. The kinetic con
stant for the hydration process and the water-holding capacity of the
seeds in different conditions were measured.
