Increased duties of the veterinary food hygienic service have been rev
iewed which belong to the sphere of concepts of food safety. Data char
acteristic of the function of Hungarian county veterinary stations in
1994 have been summarized in a Table. The duties increased in the fiel
d of food export. Obligatory introduction of HACCP system in the expor
t units is equally included in the USA and EU regulations. According t
o the USDA FSIS formulation, the HACCP regulation should result in the
diminution of pathogenic bacterial and Salmonella contamination. Food
hygienic duties increased also due to the broadening of food processi
ng and commercializing activities in the private sector. Food hygienic
references of the new animal health and food laws have been evaluated
and duties of the state service have been indicated. It has been emph
asized that the state control can not dispense the strong centralized
direction and its network of background institutions. Without these th
ere is no EU membership. EU conformity of new professional laws (enact
ing clauses and lower legal rules) has been judged essential. Finally
publication of joint regulations with the Ministry of Public Welfare h
as also been considered essential to divide certain professional dutie
s with the public health authorities.
