Pb. Morais et al., CHARACTERIZATION AND SUCCESSION OF YEAST POPULATIONS ASSOCIATED WITH SPONTANEOUS FERMENTATIONS DURING THE PRODUCTION OF BRAZILIAN SUGARCANEAGUARDENTE, World journal of microbiology & biotechnology, 13(2), 1997, pp. 241-243
A succession of yeasts was observed during fermentation of aguardente
with Saccharomyces cerevisiae being the predominant species. Candida s
ake, Kluyveromyces marxianus var. drosophilarum and apiculate yeasts w
ere also frequent. Transient yeast species were found in variable numb
ers, probably due to the daily addition of sugar-cane juice. Killer ye
asts were isolated and may have a role in the exclusion of some transi
ent and contaminant species.
