Results of studies of catalytic properties of various carbons in chemical m
odification of food fats were generalized. The influence of the conditions
of catalytic treatment (temperature, composition of fat mixture, contact ti
me with catalyst, type of reactor, chemical nature of the catalyst surface,
modifying additives, and procedure of reagent introduction) on final prope
rties of fat products' was studied. A cheap and efficient recoverable carbo
n-sodium catalyst was developed.
