The aim of this study was to optimize the stability of lipid emulsions in t
otal parenteral nutrition. The influence of Cremophor LE, an amphiphilic su
rfactant, on the stability of lipid emulsions was assessed using a floccula
tion technique. Methods and results are detailed in this paper. Cremophor L
E appears to be a useful co-surfactant which increases the resistance of li
pid emulsions to destabilizing ion-induced stress.
