Water extraction of the defatted cotyledons from Lathyrus odoratus yields p
roducts rich in proteins and carbohydrates. Its analysis as well as amyloly
sis and TCA fractionation suggest the presence of small amounts of ambinans
and arabinogalactans together with glycoproteins from the protein bodies.
The cell walls are non-anisotropic, thin and fragile, composed by small amo
unts of non ordered beta(1-->4)-linked fibrillar polysaccharides (possibly
cellulose) in agreement with its low mechanical strength.
