Abstract
For the correct application of the HACCP system (Hazard Analysis and Critic al Control Points), introduced in Italy during the last year, it is necessa ry a good knowledge of its principles and of biological, chemical and physi cal nature of foods. Examples of critical control points identification and correct approach to HACCP system in small companies are reported.
