Abstract
On black olives cultivar "Moresca" grew in Sicily, some physical-chemical c haracteristics important for quality have been determined. Discriminant ana lysis applied to results has not allowed the classification of samples in d efinitive groups. These results show a constant quality of fruits apart fro m production area (coastal or inside hills), while problems related to pest control make safer the hilly inside productions.
