Abstract
Tests were performed with different apple, pear, peach and apricot cultivar s of different ripeness. The firmness characteristics such as the rupture s tress, the coefficient of elasticity and the acoustic stiffness factor were determined for the fruits tested. A firmness-based expert system can be de veloped from the test results and the relationships found between the diffe rent firmness characteristics. Copyright (C) 1998 IFAC.
