Abstract
One of the major anthocyanins of blood orange juice, previously designated as cyanidin-3 -glucoside-acetate or cyanidin-3-rhamnoside, was extracted an d purified by semi-preparative HPLC. The structure of the pigment was eluci dated by HPLC-Mass Spectrometry and IH NMR spectroscopy to be cyanidin-3- ( 6"-malonyl)- beta-glucoside.
