The radioinduced peroxidation of three polyunsaturated fatty acids (PU
FAs) (linoleic acid 18:2, linolenic acid 18:3, arachidonic acid 20:4)
has been examined in aerated aqueous micellar medium at pH = 11. The a
ction of the free radicals OH in aerated medium has been quantified by
measurement of the yield of formation of conjugated dienes, The obtai
ned values depend (i) on the PUFA initial concentration, (ii) on the n
ature of the considered PUFA for the highest initial concentration. Th
e results are discussed in terms of peroxidation chain mechanism.
