Abstract
The prospects of utilisation of gum from widely grown Acacia nilotica spp. are investigated. Microencapsulation of flavours using A. senegal gum, imported from African countries is a common practice. Results sh ow that A. nilotica gum can ideally substitute A. senegal gum for micr oencapsulation of food flavour.
