The pectolytic enzymes of carrots

The pectolytic enzymes of late spring and autumn carrots (roots and leaves) were evaluated. The activities of pectin acetylesterase, rhamnogalacturona se and rhamnogalacturonan lyase were detected besides the expected activiti es of exopolygalacturonase and pectinesterase, but no activity of polygalac turonase was found. This is the first report about the presence of rhamnoga lacturonan splitting enzymes in plant tissues.
