Abstract
The German milk ordinance makes particular demands on cleaning and disinfec tion of milk heating plants. The committee has adjusted parts of the former guidelines, dating from 1966, to the present state of technology. The comp osition of acid and akaline cleaning agents as well as essential steps of c leaning procedures are described. Furthermore, model cleaning and disinfect ion programmes and recommendations for internal controls and proofs are giv en.
