For the consumers the quality meat programs represent nowadays a routine pa
rt of the offer. The demand on the validity is of particular priority espec
ially at beef programs, not least because of the consequential effects of t
he BSE-crisis. Though an evaluation of the quality meat programs have recen
tly been published in Germany (AGV, 1997), however, it seems to be curtaile
d in objective. Evaluating the criteria, it has put particular emphasis on
the aspects of the ecological production, while the criteria of the product
quality and product safety have been neglected. The present study aimed at
a more integrated consideration of all quality beef programs, as far as po
ssible.
