Abstract
The effectiveness was evaluated of a cathodic solution prepared by the elec
trolysis of an NaCl solution in inhibiting the aqueous oxidation of ethyl l
inoleate and ethyl docosahexaenoate. The decrease in unoxidized substrate a
nd the formation of total peroxides during oxidation indicate that the cath
odic solution completely inhibited the oxidation of both ethyl esters, whil
e these lipids were easily oxidized in an NaCl solution and in distilled wa
ter. The antioxidative activity of the cathodic solution was confirmed afte
r open incubation for 3 days and 7 days at 37 degrees C, although the scave
nging ability of the cathodic solution toward DPPH radicals disappeared dur
ing this incubation.
