Abstract
A new capsiate-like substance, named nordihydrocapsiate (1), has been isola ted from the fruits of a nonpungent cultivar, CH-19 Sweet, of pepper (Capsi cum annuum). The structure of 1 was determined to be 4-hydroxy-3-methoxyben zyl 7-methyloctanoate by spectroscopic methods.
