Abstract
The mucilage extracted from the seeds of the quince tree with water under m ild conditions, was separated into 3 major polysaccharide fractions: (I) gl ucan; (II) galacto-glucan and manno-glucan or galacto-manno-glucan with a m olecular proportion of galactose, mannose and glucose 3 : 1 :9, and (III) a n acidic arabino-xylan. The sugar analysis of the last one showed a 1:0.09: 0.43:0.14:0.43 molar proportion of the components D-xylose; L-arabinose; 4- O-Me-D-glucuronic-acid; D-glucuronic acid; O-acetyl groups.
