Abstract
A powdered crude lactose was produced from deproteinized whey using an ethanol-water system. The concentrated whey (similar to 38% TS) prepa red from whey powder was subjected to a heating process to obtain depr oteinized whey. The powdered crude lactose had 97.0% lactose mainly in a-form. However, the protein and ash contents of this product were hi gher than those of edible-grade lactose.
