Glucose-fructose oxidoreductase from Zymomonas mobilis catalyzed the o
xidation of various aldose sugars to the corresponding aldonic acids.
The enzyme was used for the selective and high-yield conversion of lac
tose to lactobionic acid in batch, fed-batch and continous reaction mo
de. A productivity of 110 g L-1 d(-1) was obtained in an ultrafiltrati
on membrane reactor, operated for 70 h.
