The induction of flocculation of Pediococcus damnosus by a proteineous
factor, purified from the yeast culture supernatant, was strongly dep
endent on the yeast strain used. The measurement of flocculation induc
ing activity can be used to examine the affinity of yeast strains towa
rd eventual bacterial contaminants or to evaluate the stability of coc
ultures in mixed culture fermentations.
