Abstract
The main objectives of this brief review are to: (1) provide a literat ure update on the analytical methods currently used to identify and es timate the concentration of food-grade gums and thickeners; (2) provid e a detailed account of some novel techniques based on antibodies (mon oclonal and polyclonal) and lectins that have been developed for a ran ge of polysaccharides (e.g. galactomannans, xanthan gum, carrageenans and gum arabic); and (3) shed some light on probable future developmen ts in this field.
