Abstract
Volatile compounds of truffle juices of Tuber melanosporum, T. brumale , T. aestivum and T. indicum were extracted using a dynamic headspace apparatus and identified by gas chromatography-mass spectrometry. Amon g Volatile compounds, six molecules are identified as discriminant var iables with principal component analysis (PCA). First, factorial discr iminant analysis (FDA) describes four different groups according to th e species of the tinned juices. Second, it divides T. melanosporum jui ces according to the number of boilings applied during the process.
