Effect of bruchid infestation on selected antinutritional factors, sap
onin, phytic acid and trypsin inhibitor activities, of three (mung bea
n, chickpea and pigeon pea) legumes stored for six months was studied.
The three antinutritional factors, saponin, phytic acid and trypsin i
nhibitor activity (TIA), increased with increased storage period. Sapo
nin, phytic acid and trypsin inhibitor activity values were significan
tly lower in control samples compared to stored infested samples. The
difference between the contents of antinutritional factors were signif
icant (p < 0.05) during different storage periods.
