We evaluated the content of vitamins retinol (as retinol acetate), cho
lecalcipherol and tocopherol, the content of fatty acids and amino aci
ds in eggs of two groups of Japanese quail selected for low (LC) and h
igh (HC) yolk cholesterol concentration. 1. Content of retinol (as ret
inol acetate) was in LC-group 228.7 and in HC-group 294.5 mu g/100 g w
et yolk (mean value) (P less than or equal to 0.05). 2. Content of cho
lecalcipherol was in LC-group 1.341 and in HC-group 1.667 mu g/100 g w
et yolk (mean value). 3. Content of tocopherol was in LC-group 2.89 mg
and in HC-group 3.93 mg/100 g wet yolk (mean value). 4. By analysing
yolk fatty acids we found in LC-group 11.2% myristic acid but none was
found in HC-group. We found in HC-group 8.12% stearic acids but none
was found in LC-group. The content of oleic acids was by 12% higher in
LC-group. In HC-group the content of unsaturated fatty acids with lon
ger chain C-22-C-30 (10.3%) was twice as high as in LC-group (4.5%).
