Abstract
A predictive mathematical model based on enthalpy formulation was deve loped to study the cooking process of hamburger patties. The effect of various process conditions on the hamburger cooking process was inves tigated using the predictive model. The thickness of the patty was det ermined to exert a major influence on the center temperature profile.
