Antioxidant activity of thirteen essential oils from spice materials w
as investigated on sunflower oil, stored at 70 degrees C. The peroxide
values at a regular intervals have been estimated. It has been found
that volatile oil of ajowain, anise, cumin, saunf, sowa, pipermint, sp
earmint and Indian basil possesses excellent antioxidant effects. Anti
oxidant properties of these oils have been found to be better compared
to synthetic antioxidant, butylated hydroxy toluene (BHT) and hence c
an be exploited for commercialization.
