Ground seeds of Ammi majus L. were extracted with n-hexane yielding 11
.7% of crudle oil (dry basis). Physicochemical characteristics and fat
ty acid composition of the oil were determined, only two acids were fo
und in significative proportion: <(18:1)under bar> (72.1); <(18:2)unde
r bar> (19.7% of total acids). The residual seed meal contained 27.5%
of crude protein (dry basis) with 5.1 g/16 g N of available lysine. To
tal and phytic acid phosphorus, phytic acid, calcium, ash, crude fiber
, sugar, polisaccharides and residual lipids are reported.
