Abstract
The purpose of this work was to evaluate the potential antioxidant act ivity of eugenol, thymol, 1,8-cineole, and anethole in raw soybean oil by quantization of the peroxide value. The antioxidant activity assay s exhibited large differences between treatments. Eugenol (0.02%) and 1,8-cineole (0,1%) showed the highest stabilization factors.
