LIPASE-CATALYZED SYNTHESIS OF MONOGLYCERI DES

New developments in lipase-catalyzed synthesis of monoglycerides are r eviewed. Different methods such as glycerolysis and selective hydrolys is of fats and oils, and the esterification of fatty acids or transest erification of esters with glycerol are presented. Furthermore, exampl es for reactions using protected glycerols are included. The reaction systems described range from synthesis in organic solvents, reverse mi celles to solid-phase-systems. Continuous reactions are also taken int o account.
