Using a Brookfield HBDV I+ viscosimeter with a coaxial cylinders syste
m, the consistency coefficient and flow behavior index were obtained f
or broccoli pulp with a water contents of 93,76; 94,76; 95,76 and 96,7
6 g/100g pulp, in a temperature range from 16,5 to 75 degrees C. Power
law model described satisfactorily the flow behavior of pulps. Consis
tency coefficient showed dependence with both temperature and water co
ntents. Activation energy, associated with the flow was 16,4 kJ/mol, f
or 96,76 % water content; this value showed a low temperature effect o
n rheological behavior, over the range of temperatures studied in this
work.
