The objective of the study was to determine proportions of the particu
lar amino acids in some muscles (musculus semitendinosus, musculus lon
gissimus lumborum et thoracis, musculus triceps brachii) from the lamb
skeletal muscles. Skeletal muscles from cuts of leg, loin and rack of
ram lambs of Charollais breed (CH) and Stavropol Merino breed (SM) we
re used for analyses. Particular amino acids (AA) were determined on a
n AAA 339 apparatus pursuant to the standard CSN 46 7092. The results
indicate that Charollais lambs have better contents of essential amino
acids in the muscles m. semitendinosus and m. triceps the difference
between CH and SM was highly significant (P less than or equal to 0.01
). As for the particular essential AA, only lysine and arginine conten
ts were significantly higher in all examined cuts in CH breed (P less
than or equal to 0.01). Merino lambs had higher methionine contents in
all examined cuts; this difference was highly significant in m. longi
ssimus lumborum ft thoracis in comparison with CH breed (P less than o
r equal to 0.01).
