Educational provision for potential recruits to the dairy industry has
changed dramatically over recent years. This study considers the curr
ent situation in various countries including the United Kingdom, and h
ighlights the evolution of the traditional dairy based courses to curr
icula which now embrace science and technology of all main food areas,
together with an increasingly important element of quality management
. Effective delivery of current courses via the use of contemporary te
aching methodologies is explored. Emerging concerns that the specific
training needs of the dairy industry are poorly addressed by the natur
e of current courses are discussed.
