Abstract
Mono-O-allyoxycarbonyl sucrose derivatives have been prepared by react ion of unprotected sucrose with allyl chloroformate in pure water, whe reas the presence of a cosolvent is necessary in the case of the react ion with octyl chloroformate, for which polysubstitution is favoured b ecause of hydrophobic interactions.
