Ionizing radiation of vegetables is a cleaning up and preservation phy
sical treatment which consists in submitting them to gamma radiation,
X radiation or electrons beam. This study deals with the influence of
gamma radiation on antioxidative effect of vegetables polyphenolic par
ts. In that purpose, we use a simple biological test based on erythroc
ytes haemolysis.
