Abstract
Levan, fructo-oligosaccharides and fructosyl derivatives were formed f rom sucrose using recombinant leavansucrase from Rahnella aquatilis. L evan formation was optimal at 30 degrees C resulting 57% of the theore tical yield. The more suitable substrate concentration from levan form ation was 200 g sucrose/L. Oligosaccharides was accumulated selectivel y at high substrate concentration. The increase of levan and oligosacc harides formation was not achieved by adding water-miscible organic so lvent. Alkyl fructosides were synthesized from various alcohols as fru ctosyl acceptors by R. aquatilis levansucrase.
