Tryptophan contents of total (true) proteins. protein fractions, album
ins and globulins, were determined. Tryptophan contents of total prote
ins ranged from 5.8 g kg(-1) (Mucuna atropurpurea) to 20.3 g kg(-1) (P
rosopis chilensis). Tryptophan contents of Abrus precatorius 'white va
riety', Acacia nilotica, Prosopis chilensis, Vigna aconitifolia and V.
sinensis were found to be greater than those present in whole hen's e
gg protein (16.2 g kg(-1) protein). In most of the presently investiga
ted legumes, the albumin fractions seemed to be a rich source of trypt
ophan as compared to globulins.
