A new sampling means using a rotating filter-tube was investigated for
analysis of brewing mash. This means prevented the adhesion of cake o
nto the filter, which led to an increase of filtration flux from the m
ashes with high filtration resistance. In a sake-mash, the filtration
flux of the rotated filter was approximately 10-fold higher than that
with no rotation. Continual measurement of alcohol and specific densit
y of the filtrate was feasible throughout the entire mashing process w
ith no washing. It was also feasible for sampling the mashes of soy sa
uce and shochu.
