The effects of the ingestion of 20% fat-cream cheese with a breakfast
on glycaemic and insulinaemic responses of male healthy volunteers hav
e been studied in two experiments with 12 subjects each. The results i
ndicate that as few as 100 g cream cheese significantly decrease the m
aximal glycaemic value and the area under the glucose curve, when comp
ared with a standard french breakfast. Increasing the ingested amount
of cream cheese has no further effect on the responses. The possible m
