An Ocimum sanctum seed based matrix for immobilisation of enzymes has
been developed. The alpha-rhamnosidase activity of naringinase has bee
n immobilised on this newly developed matrix. K-m, pH and temperature
optima of the immobilized enzyme using p-nitrophenyl-alpha-L-rhamnopyr
anoside as the substrate have been determined and found to be 0.17 mM,
4.0 and 60 degrees C respectively.
